| Pink Lemonade Cookies 1 cup butter 1 cup + 1/4 cup sugar, divided 2 eggs 1 tsp. Baking soda 3 cups sifted flour 6 oz. Can froze pink lemonade concentrate, thawed and separated into 1/2 cup and 1/4 cup portions Heat oven to 400. Need ungreased baking sheets. Sift the flour and baking soda together and set aside. Cream the butter and 1 cup of the sugar together. Add the eggs and beat well. Stir the flour mixture into the sugar mixture alternately with the 1/2 cup lemonade concentrate. Drop by teaspoonfuls, 2 inches apart on baking sheets and bake for 8 minutes or until cookie edges are lightly browned. Remove the cookies from the oven. Brush lightly with the pink lemonade concentrate and sprinkle with the remaining sugar. Let cool on wire racks. Makes 6 dozen. |
