[] AHARVEDA - not a diet, but a way of life which could save your life!- Nagpur Times Article [1 Attachment]

'Aharveda' – not a diet, but a way of life which could save your life!

[ NB: Harish Shetty owner of Radhakrishna restaurant and Golden Chariot hotel both opp Stoppers shop , S. V. Raod, Andheri (East), Mumbai. ]

Nagpur: "No milk. No curds. No sugar. No oil. And no wheat, bajra or jowar either…absolutely no maida, no butter, cream, cheese, eggs or non veg.
"After I finish giving these 'commands' all my listeners want to run for their lives! Who can live with these restrictions?? I would rather live 10 years less, than live without eating all these things – say people."
"And then I invite them to enjoy the dinner buffet spread with me: we start with a 'cocktail' of vegetable juices; then a soup and then a generous spread that has all your favorite dishes – cucumber raita, dahiwada, aloo bonda, Veg Kolhapuri, Methi matar aloo, Thai curry, Tomato 'rice' and even very rich and creamy looking Gajar halwa and Kheer! People partake on this feast and then they are like 'we can do this all our lives!' "

People listen enraptured as Harish Shetty narrates all this – he is speaking to an audience that consists largely of Nagpur High Court Judiciary, many of them are already on 'Aharveda' and say they have benefited hugely by following the diet.

So what is the principle behind 'Aharveda' – a phrase also coined by Harish for his revolutionary diet, specially with the Indian palate in mind.

'Ahar' means food and as we all know Vedas are our ancient scriptures. As their web site says-

" Through the Aharveda way, we are combining age-old principles of wellness – centric food science as practised in ancient India and our decades of experience in creating tasty food. The Aharveda Way will prepare you to fight today's stress levels and ailments with lots of energy, a well-balanced body and a healthy, positive mindset. Our vision is to fight major diseases and we believe it's possible through systematic cleansing of body and by including body balancing diet in our daily food."

So what do you get to eat in the Aharveda plan?

Lots of fruits – they recommend upto 2 Kgs of fruits per person; lots of nimbu pani, or lemon juice, vegetables and vegetable juices, all kinds of dals and in lieu of food grains stuff like 'bhagar', Rajgira, Singhada atta (all the things that are allowed in 'fasts' ) and plenty of root vegetables like potato, sweet potato, yam/Suran and arbi.

Also all nuts and dry fruits.

So if you are wondering how 'dahi wada' and 'kheer' are made without curds or milk, here's the answer. The curds are made of peanuts and milk for kheer comes from coconut milk and/ or crushed badam paste diluted with water. And I guarantee they taste as good or better than the stuff we know!

How did Aharveda come about?

As we all know, the Shettys of India are all into the Food Business! Whether it is in South India or Mumbai or Nagpur – one can find many popular restaurants owned by Shettys.

Harish' family also ran a famous Vegetarian restaurant called Radhakrishna in Andheri. It served South Indian, Punjabi, Gujarathi, Chinese, Italian – the full range of international cuisine. It had seating for 500 and had been doing thriving business for four decades.

Harish had naturally joined the family business as soon as he was ready.
Then when he was just 36 years of age, one day he was suddenly gasping for breath.

"It was like someone was chocking me" recalls Harish.

He was rushed to the hospital where tests showed that all his parameters were off. His B.P., his blood sugar, his cholesterol, everything. Despite Harish being a teetotaler who did not smoke, drink or eat non veg himself.

So what had gone wrong? Life style, diet, habits, atmospheric pollution – everything seemed to have combined to make Harish very sick.

He had two alternatives before him: either begin on a regimen of pills that he would have to take life long and the dosages would only increase as he grew older or find alternative therapies for 'cure'.

There was a stint when he tried out everything, Homeopathy, Ayurveda everything. Nothing really helped. Naturopathic food and practises finally brought some relief but Harish realized the bland food they prescribed was not something one could eat life long.

"Why should healthy be tasteless?" He asked himself.

Then he turned his kitchen into a Lab. and began experimenting. He consulted scriptures, old cook books and any literature he could get his hands on. He really educated himself on Food and began by treating himself with natural foods. He became his own Guinea pig!

Almost rapidly and miraculously his 'parameters' regained normalcy. He not only lost weight and but he lost years as well!

Today when he is 50, he looks like someone in his 30s!! He is full of energy, is infectiously optimistic and cheerful and has a very positive attitude to life.

"It is absolutely true – a healthy body brings about a healthy mind and a feeling of peace and compassion towards all" he says.

"But it is not just food that will cure you" Harish cautions.

"The more important thing is breathing right, taking in plenty of oxygen. Practise deep breathing, breathing from your stomach as babies do, consciously twice- thrice a day."

"See, you can live without food for two days, but not even a minute without air" he reminds his listeners.

Along with the food you eat, you also need to follow good eating habits. Like dinner should be had before 8 p.m.

In the mornings, have as many fruits as you can, but only one fruit at a time. After a gap of an hour, you can have another..

Between 12 and 8 p.m. is the time for cooked foods.. (Cooked as per his instructions without oil – but you can use all the spices and condiments you want!)

"One should sleep by 10 p.m. and wake up as early as you can – 4 a.m. is ideal" he says.

He also generously allows you 65 days out of 365 as 'cheat days' when you can eat what you want! "Don't deprive yourself of anything you love. Just eat it on a Sunday" he says. He knows forsaking your favorite foods can lead to uncontrolled cravings.

"Also when you are on a Holiday, you can give your diet a holiday too – since there is no point in second guessing the 'health quotient' of hotel food!"

Over the years, his 'diet' – or his Aharveda – found many followers and many chronic and 'hopeless' patients found health again.

Like the case of this 80+ lady who had such bad arthritis that she had not come down from her 3rd floor flat for almost 15 years! (There was no lift in the building in Mumbai.) Then when movement inside the flat also became painful she seriously began contemplating knee joint replacement surgeries for both knees. That was when someone introduced Harish to her. He asked her to try his Aharveda for 6 months – if it did not succeed "I will pay for your operation" promised Harish.

She followed it faithfully and in 8 months she was climbing down from her flat twice a day! She felt like she had a new lease of life.

She offered Harish the – lakhs that would have been her operation cost.

"Don't give this to me, use it to buy fruits and other healthy food for poor people" he said.

There are many such people who have been restored health and are off most of their medications..

Every Sunday, Harish sees 100 'patients' in his 'OPD' and talks to them about the benefits of eating Natural and Live foods that is the soul of Aharveda. For those who want to follow it strictly he makes meal plans – even giving out recipes. He has hundreds of recipes to dole out and is in the process of writing a Cook Book. His sessions are full always, one has to do advance booking for seats!

Now Harish is endeavoring to take this Science of Healthy Eating all over the country. Even all over the world. This quest brought him to Nagpur where select Nagpurians got a taste of his unique cuisine.

His next plan is to start Health Food Restaurants all over the country.

He is a Shetty, remember??!

Subject: 10 brain foods for increased intelligence

Certain foods can boost our intellectual performance.
Discover your brains best friends and add them to your diet in your
quest to become the next Nobel Prize winner!
In addition to calories, you should also make sure you get good nutrients for your
neurons through a balanced and varied diet. To ensure your brain gets what it needs
there are certain foods you should add to your diet.

1. Oily fish (mackerel, sardines salmon…)
for brain maintenance

More than 50% of brain mass is made up of lipids, and over 70% of these are fatty acids
that belong to the well-known Omega 3 group.
These fats are crucial to the production and maintenance of brain cells,
preserving the fluidity of cell membrane.
They also play a part in neuron activity.
Weakening brain function and memory trouble can often be traced back
to a deficiency in Omega 31.
Oily fish are one of the best sources of Omega 3, but if fish isn't to your taste,
consider nut oils and rapeseed oil as equally rich alternatives.

2. Pulses (lentils, chick-peas...)
for brain energy
The brain is said to be glucose-dependent, which means it uses only glucose to function.
It consumes more than 5g an hour, but doesnt know how to store it.
It therefore has to be regularly supplied your diet via the circulatory system.
It has long been proven that the most difficult task within intellectual performance,
the capacity to memorise, depends on the level of glucose in the blood2.
But beware of indulging in sugary foods and confectionery; though easy to snack on,
they can lead to such strong fluctuations that your system can react violently and
reduce blood sugar to below its normal level. The brain cannot tolerate this and the
drop in blood sugar leads to fatigue and a shorter attention span.

The sugars that are said to be complex and which have a low Glycaemic Index
(GI) are therefore crucial. Pulses are rich in these complexsugars, and their GI
is one of the lowest.
This really works to allow the regulation of glucose in the blood and its supply to the brain
without creating a reaction of hyperglycaemia. If pulses arent to your taste either,
consider wholegrain foods, especially cooked al dente.

3. Bananas for a calm brain
Rich in magnesium, which is essential in the transmission of nervous impulses,
bananas are equally a source of Vitamin B6 (just one banana holds practically
a quarter of the recommended daily amount).
This vitamin is not only involved in the assimilation and use of magnesium in cells,
but also in the metabolism of amino acids and the functioning of the nervous system
through enabling the production of certain neurotransmitters, notably Serotonin and GABA
(Gamma-amino butyric acid).

These two molecules seem to create the right state of mind for prudent,
calm and measured behaviour. If you dont like bananas, consider prunes
or dried fruit instead.

4. Liver (veal, beef, chicken…)
for intelligence
The brain accounts for around 20% of the bodys oxygen needs, and iron is needed to get oxygen
to the brain by means of the bloods haemoglobin. Liver is one of your diets assets guaranteed
to contain this valuable metal. Equally, liver is one of the most important sources of Vitamin B.
Since the mid 1980s, it has been shown that these vitamins, mainly B9, B12, B1 and B6,
improve cognitive function and the results of intelligence tests. If you dont like liver, consider,
beef or nutritional yeast as a supplement.

5. Red berries for happy brain cells
All edible berries (blackcurrants, strawberries, raspberries, blueberries, blackberries etc.)
are veritable mines of Vitamin C (blackcurrants have twice as much concentration in Vitamin C
as kiwi fruit, and three times as much as oranges).
They have antioxidant micronutrients that make up their colour
(anthocyanes, polyphenols, flavonoids…)

Together, they not only fight against free radicals which can affect nerve cells,
notably brain cells, but also improve circulation and strengthen blood capillaries,
which enable the best oxygenation of the brain.
If you dont like red berries, then go for kiwi fruit or garlic.

6. Shellfish for brain function
Though rich in Vitamin B12 and in protein (notably lysine, a precursor to dopamine,
a powerful neurotransmitter), it is mostly the oligo-elements in seafood and crustaceans
(oysters, clams, shrimp etc.) that are good for brain function.
Oligo-elements are crucial in order to fight and prevent stress and its inconveniences.
Some of these can be described as therapeutic weaponsas they have a hand in fighting anxiety,
mental fatigue and nervous disposition.
Manganese, copper, lithium, zinc and iodine have this effect too and
can also be found in seafood.
If you dont like shellfish, consider eating wholemeal bread, algae
(which has iodised salt as in table salt) or wheat germ.

7.. Eggs for brain connectivity
Eggs contain lecithin and phospholipids, integral to the construction of brain cell membrane.
In terms of feeding intellect, their value lies mainly in the quality of their proteins.
Long used as points of reference when analysing the quality of other dietary proteins
by the UN Food and Agriculture Organisation (FOA), eggs are actually rich in amino acids,
essential in the production of the principal neurotransmitters.

This is also the case with acetylcholine, a synthesis made from methionine and serine used in the
process of memorisation, where noradrenalin (which stimulates learning) and its production
rely on the presence of tyrosine and phenylaline, which are again found in the proteins in eggs.
If you dont like eggs, consider white fish as an alternative.

8. Spinach for good memory
All leafy vegetables share a richness in Vitamin B9 (or folates), which is known to play an active role
in the development of a foetusnervous tissue and also in the renewal of blood cells.
One of the signs of Vitamin B9 deficiency is reduced awareness and memory deterioration3.
This phenomenon, observed in people of advanced age with folate deficiency, can probably be
explained by the fact that Vitamin B9 is needed for the maintenance of dendrites
(arborisation of neurons, where B9 levels are high).

If you dont like spinach, go for watercress, lambs lettuce, iceberg lettuce,
broccoli or different types of herbs.
Of these, rosemary is worth noting as it has certain flavonoids (notably apigenin) in its aroma,
which possess stimulating properties affecting concentration and memory through encouraging
cerebral blood flow.

9. Cocoa for brain stimulation
In Aztec times, cocoa was already considered a medicine. Later, Casanova,
the legendary seducer of women, used chocolate as an aphrodisiac with the kind of effects
we know well! Since then,the chemical analysis of cocoa paste has revealed many surprises;
besides the important calorific benefits, the presence of molecules similar to caffeine
(theobromine, theophylline) and amphetamines (phenylethylamine, tyramine)
give chocolate its true power as a tonic and psycho-stimulant.
At the same time, chocolates high magnesium content (330mg per 100g),
and the molecules it contains which are similar to serotonin (the relaxationhormone),
account for its anti-stressand anti-depressant effects.

But thats not all! Scientists have demonstrated the positive role flavonoids present in cocoa
play in encouraging better dilation of blood vessels4. These antioxidant compounds help
fight free radicals and guard the brains activity. Beware of over-indulging, however.
If you dont like chocolate, drink tea (which also contains antioxidants) and weak coffee
(for its caffeine and its psycho-stimulating effect5), but being mindful of excess and without
indulging too much at the risk of cancelling out or even reversing the effects.

10. Avocado to keep the brain youngThe avocado is exceptionally rich in Vitamin E. This vitamin constitutes one of the most powerful antioxidants and protects the fatty tissues of the brain from ageing.. If you dont like avocado, consider oleaginous fruit instead (nuts, particularly hazelnuts etc.). And dont forget that, in order to become a real intellectual athlete, you must equally train your brain with special exercises (cerebral games, memory puzzles. And you mustnt neglect rest either (sleep is crucial for the brains regeneration¦).In following this advice, you may not pick up that Nobel Prize, but you will have a brain thats at the top of its game nonetheless! 1.
