About Gulkand (Rose Petals Jam)

"Gul" means rose and "kand" means sweet.
Thus, Gulkand is a sweet preserve made of rose petalsIt can be called Rose Petals Jam as well. Gulkand is native to India and Pakistan. It is an Ayurvedic tonic and a delicious and healthy food that can easily be prepared at home.
Gulkand is one of the ingredients used in Paan - the traditional Indian mouth freshener and digestive. It is a fact that, like wine, it becomes better as it ages.
Traditionally, gulkand is made from the rose petals of the desi or the wild rose plant. However, due the predominance of the hybrid rose varieties, it is diificult to find the desi variety everywhere. Not to worry, it can be made from the hybrid variety of roses too. But the traditional one is the best.
The flowers of the wild roses are red or pink and neither as big nor as showy as the hybrids though they exude a unique smell which is deep and sweet.

Method To Make Gulkand At Home

Making gulkand at home is not difficult at all. Just ensure the roses are pesticide free or organic. If you cannot get the desi variety of roses you can use the hybrid roses. Use only dark red or pink roses for their petals. Also, ensure the petals are fresh and tender.
Ingredients
  • 1 part Rose Petals, washed and dried overnight.
  • 1 part Granular sugar or candy sugar.
  • 1 sterilized and dry wide mouthed glass jar with lid.
Method
  • Put a layer of petals about an inch thick and top it with equal quantity (by weight) of granulated sugar.
  • Keep adding a layer each of rose petals and sugar, till the jar is full.
  • Close the lid tight and keep the jar in full sun. In the evening keep the jar inside.
  • Every morning keep the jar in full sun the whole day and take it inside in the evening. Shake the jar well once a day.
  • Carry on this process for a week to two weeks till the entire mixture has become one mass with a corresponding darkening of color.
  • Since the rose petals disintegrate due to heat, the amount of time in which gulkand gets ready will depend on the how strong the sunlight is.
  • In colder areas with weak sunlight, pounding the rose leaves before putting them in the jar will help disintegrate the petals faster and complete the process sooner.
Note - Optional Additions
  1. "Vark" or thin edible silver leaves found at Indian grocers.
  2. Praval pishti - processed coral, which is a heart and brain tonic.
  3. Cardamom powder - good for urinary, respiratory and stomach problems.
  4. Godanti Bhasma - a natural form of calcium
Added to increase the benefits of Gulkand.

Health Benefits Of Gulkand

  1. Gulkand is cooling so is beneficial in alleviating all heat related problems like tiredness, lethargy, itching, aches and pains, reduces burning sensations in the soles and palms.
  2. It treats mouth ulcers, makes teeth and gums strong and also reduces redness and inflammation of the eyes.
  3. It reduces women's problems like leucorrhea and heavy menses.
  4. It improves appetite, betters digestion, corrects digestive issues.
  5. It is an excellent tonic, reduces stress, strengthens the heart, liver and central nervous system.
  6. Gulkand reduces acidity and reduces heat in the stomach, treats ulcers and swelling in the intestine.
  7. It corrects skin issues like pimples, blemishes etc.

Normal dose of gulkand is 1 tsp 2 times a day, morning and evening.
Gulkand can be taken on its own or added to milk, lassi or juices. It can also be added to rose tea.
However, since it contains sugar, those with diabetes should consult their doctor before consuming it.

Sugar palm or Toddy palm fruit is also called by the name Palmyra palm. It is called Ice-apple in British English. Palmyra palm tree is the national tree of Cambodia and Borassus flabellifer is the Latin nameIt grows in the suitable climate of Southeast Asian countries.
The sweet sap of the Palmyra tree is called Toddy and is used in preparation ofPalm jaggery. The sap is fermented to make Arrack which is an alcoholic beverage. Almost every part of the tree is useful to mankind. The fan shaped tall tree bears fruits like that of a coconut tree. The pulp is tender and the husk is fibrous similar to that in Coconut. The fruit has a black husk and is 4 to 7 inches in diameter. It is borne in clusters. The top portion of the fruit is cut off to reveal the three sweet jelly seed sockets.
In many places of India where the Toddy palm trees are grown, the ripened fruit is covered with clay as it falls to the ground and a plant thus gets reproduced. Later the tender shoot popping out of the fruit is boiled, roasted and eaten. The fleshy stems are found to be very nutritious and fibrous.
The ripened pulp of the sugar palm is jelly like tender, flat and round with a light brown skin. The inner portion is a juicy socket structure. It has a mild sweet taste. The pulp or the seeds become harder as they grow older.

Sugar Palm fruit health benefits and Uses:

1. Palm seeds are considered as a delicacy in India and other asian countries where the Palmyra trees are grown. During early summer, they are sold in markets and for a limited period of time. Summer holidays are enjoyed by preparing different types of drinks, pancakes and dishes prepared from the nutritious pulp.
2. The tender fruit pulp is eaten raw during summer because it gives a cooling effect to the body. The ripened fibrous outer layer of the fruit can be eaten raw, boiled, or roasted..
3. The fruit contains vitamin A, B and also Vitamin C in the form of ascorbic acid.
4. It is rich in minerals too. Minerals such as Potassium, Iron, Calcium, Phosphorous and Zinc are found in the fruit.

6. In some Asian stores they are found in cans but usually they are canned in sugar syrup. Due to the sugar syrup it becomes too sweet.
7. The fresh ones are little crunchy and moderate sweet to taste. They are chopped to small pieces and used in desserts with other variety of fruits like Pineapple, Mangoes, Papaya and offered along with some good flavored ice cream.

9.. The seed sockets of Ice-apple have been the inspiration for some sweets prepared in West Bengal. One such sweet is Jalbhara Sandesh.
10.. Its medicinal uses are still unknown to people. The pulp from the mature fruit is used over the skin to cure Dermatitis.
11. Bengalis have perfected the art of preparation of many sweet dishes with the yellowish viscous fluidic substance obtained from a ripe palm fruit. They include the mustard oil fried Taler Bora or the Taalkheer made by mixing it with thickened cow's milk.

7 Side Effects of Drinking Coffee

1. Coffee and Hydrochloric Acid

Drinking coffee on an empty stomach, such as first thing in the morning, stimulates hydrochloric acid production. This can be a problem because HCl should only be produced to digest meals. If your body has to make HCl more often in response to regular cups of coffee, it may have difficulty producing enough to deal with a large meal.
Protein digestion in particular is affected by a lack of hydrochloric acid in the stomach and protein based foods can pass into the small intestine before being properly broken down. Undigested protein is associated in a variety of health problems, from bloating and gas to IBS, diverticulitis and even colon cancer.
In fact, the knock on effect of not digesting your food properly due to low hydrochloric acid in the stomach could be implicated in dozens of other health issues. Some experts go so far as to say almost all disease begins in the gut. Given this, you can see why it's important to limit anything that interferes with its proper functioning.

2. Ulcers, IBS and Acidity

Many of the compounds in coffee like caffeine and the various acids found in coffee beans can irritate your stomach and the lining of your small intestine. It's known to be a problem for those suffering from ulcers, gastritis, IBS and Crohn's disease and doctors generally advise patients with these conditions to avoid coffee completely. The question is, could excessive coffee consumption contribute to these health issues in the first place?
Ulcers are believed to be caused by the Helicobacter pylori bacteria. However, the acidic effect coffee has on the stomach may contribute to providing the weakened stomach lining necessary for H. pylori to take hold initially.
Drinking coffee can also irritate the lining of the small intestine, potentially leading to abdominal spasms, cramps and elimination problems, often alternating between constipation and diarrhea. This condition is known as irritable bowel syndrome and more and more people are being diagnosed with it in recent years.

3. Heartburn Problems

By stimulating peristalsis, coffee also appears to promote increased gastric emptying, whereby the stomach's contents are quickly passed into the small intestines, often before the digesting food has been properly broken down.
In this partially digested state, it makes it much more difficult for nutrients to be absorbed from your food. It also increases the chances of irritation and inflammation within the gastrointestinal tract.

5. Mineral Absorption, Your Kidneys and Coffee

Heavy coffee drinkers may have difficulty getting enough minerals in their diet, even if they eat mineral rich foods or take supplements. This is due to the way coffee affects iron absorption in your stomach and particularly your kidneys ability to retain calcium, zinc, magnesium and other important minerals.
While all of these minerals are vital for good health, from a digestive standpoint, any interference with magnesium absorption is particularly worrying as it is necessary to maintain bowel regularity and so many of us are already deficient in it.

Drinking lots of coffee will promote the release of the stress hormones cortisol, epinephrine and norepinephrine. These chemicals increase your body's heart rate, blood pressure and tension levels – the old 'fight or flight' response.
We often say we need to drink coffee to give us energy. But for many of us, has it gone further than just energy and turned into a kind of jittery tension that is always on and makes it difficult to relax?
