Delicious Recipes in Honor of the Fall

For us in the northern hemisphere, fall is starting. As the weather slowly cools down, trees are beginning to shed their summer foliage and the new winter collections are starting to appear in clothing stores. In honor of this wonderful season, I would like to share with you four of my favorite fall recipes that will keep you warm and satisfied:
 The Mushroom Egg Toast

Ingredients
  • ¼ cup extra virgin olive oil
  • 10 ounce sliced mushrooms
  • 4 slices sourdough toast
  • 4 fried eggs
  • 4 tbsp. chopped parsley
  • Mushroom seasoning: a pinch of cinnamon, turmeric, cumin and a couple of cloves


    Directions
  1. In large skillet, heat the oil over medium-high
  2. Add mushrooms and cook until tender and browned (approx. 8min) and season them
  3. Divide among toast slices
  4. Top each with an egg and sprinkle with 1 tbsp. chopped parsley
 
Smoked Salmon Hash

  • 1½ pounds potatoes, diced
  • ¼ cup extra virgin olive oil
  • ¼ cup crème fraiche
  • 1 tbsp. chopped chives
  • 2 tsp. prepared horseradish
  • 4 ounces smoked salmon, coarsely chopped
Directions
  1. In skillet, cook potatoes in olive oil over medium-high until tender and season
  2. In bowl, mix crème fraiche, chives and horseradish; season
  3. Mix potatoes and salmon, then serve with crème fraiche mixture
 
Roasted Chicken Cauliflower

  • 4 whole chicken legs
  • 3 tbsp. extra virgin olive oil
  • 4 cups cauliflower florets
  • 12 cloves garlic, peeled and smashed
 
 
 
 
    Directions
  1. Preheat oven to 400F degrees (205C)
  2. Pat chicken dry and season it
  3. In large skillet, heat olive oil over high
  4. Add chicken, skin side down and cook until browned (approx. 8min) then turn over and cook until browned (approx. 5min) and transfer it to a plate
  5.  Add cauliflower and garlic to skillet and cook until cauliflower begins to brown (approx. 5min)
  6.  Add the chicken and bake until chicken is cooked through (approx. 25min)
 
Pumpkin Chocolate Chip Cookies

  • ½ cup of softened Butter
  • 1 Egg
  • ¼ cup of Brown Sugar
  • ½ cup of Sugar
  • 1 tsp. of Vanilla
  • ½ cup of Pumpkin Puree
  • 1½ cup of Flour
  • ¼ tsp. of Baking Powder
  • ¼ tsp. of Baking Soda
  • 1½ tsp. of Pumpkin Spice
  • ½ cup of Chocolate Chips
Directions
  1. Beat together the butter, egg, brown sugar, sugar and vanilla.
  2. Add pumpkin and beat until mixed
  3. Combine the flour, salt, baking powder, baking soda and pumpkin spice
  4. Combine wet and dry ingredients and mix together
  5. Add chocolate chips and stir until well distributed
  6. Chill the dough at least 1 hour
  7. Preheat oven to 350F (175C)
  8. Line baking sheet with parchment paper
  9. Form dough into 1½" balls and flatten to about ¾" thick
  10. Bake for 8-10 minutes
  11. Press additional chocolate chips into the top of the cookies, if desired
  12. Allow the cookies to cool for at 10 minutes on the sheet before transferring to a cooling rack
