[www.keralites.net] Red Bean Stir-Fry from Chacko's Kitchen

 

Best served with Rice Gruel Pappadam and Chuttaracha Chammanthi

Jaldi! Jaldi! This is a quick, nutritious and healthy dinner side dish meal, that can be

prepared just under 30 minutes for today's busy family.


The Azuki bean is a small, reddish brown bean with off-white seam with sweet and a

nutty flavour. In Japan they are the King of Beans and are prized for there health properties.

Cowpea Beans Health Properties:

  1. Rich in soluble fibre – helps in reducing Cholesterol
  2. Great source of Magnesium, Iron, Zinc, Copper, Potassium, Manganese and Vitamin B3
  3. Tones spleen, stomach and pancreas.

Things You'll Need:

  • Red Beans – 1 cup
  • Onion – 1 large
  • Garlic – 1 bulb
  • Ginger – 2 inch root
  • Pepper Powder – 1 tsp
  • Turmeric – ¼ tsp
  • Salt – to taste
  • Water – 300 – 500 ml
  • Coconut Oil – 1 tbsp
  • Curry Leaves – 2 sprig

Golden Touch Misc-en-Place [40 mins]

  • Wash and pressure cook Chori beans with Salt, Turmeric, Pepper Powder and Water till 1 whistle on high heat, reduce flame and simmer for 30 minutes.
  • Slice the Onion.
  • Peel, clean, slice in small pieces and crush Ginger and Garlic.

  1. Heat Oil in a non-stick fry pan.
  2. Add the crushed Ginger, Garlic and Curry Leaves, sauté for about 3-4 mins till the flavours of the Ginger/Garlic/Curry Leaves get incorporated into the Oil. Fun & Info @ Keralites.net
  3. Add Onion and sauté till it is translucent. Fun & Info @ Keralites.net
  4. Add the cooked Chori beans to this pan and stir fry for 2-3 minutes and it is ready to be served.
