OVEN FRIED FISH                                                 MAKES 4 SERVINGS.

Malt vinegar
2 shallots, finely chopped
3 cups peas
1 cup parsley
Salt and Pepper
1 lemon, zested
1 tbs onion powder
2 tbs finely chopped chives
6 tbs butter, 4 tbs melted
2 cups chicken stock
1 tbs oil
1/2 cup mint leaves
2 large egg whites
2 pounds fish fillet, cut into 8 rectangles
1 tbs garlic powder
1 tbs Old Bay seasoning
2 tbs chopped thyme
1 1/2 cups breadcrumbs

Heat oven to 400°. Position a rack on a baking sheet. In a dish, toss breadcrumbs with melted butter. Season with thyme, chives, Old Bay, onion powder, garlic powder, and zest. Season fish with salt. Place egg whites in another dish, beat until frothy. Coat fish in egg whites, then press into breadcrumb mixture to coat. Place on rack lined baking sheet. Bake fish until breading is a deep golden brown, 20 min.
-Using a blender or food processor, chop parsley and mint. Scrape herbs into a dish, return processor bowl, do not rinse. Pulse peas until coarsely chopped. In a skillet, heat oil with remaining butter. Add shallots, cook 5 min. Add stock and peas cook 10 min. Season with salt, pepper and herbs. Spoon peas onto plates, top with fish. Douse with vinegar, then SERVE...
