[www.keralites.net] Lemon Butterfly Cupcakes---Pretty Butterflies

 

LEMON BUTTERFLY CUPCAKES---Cupcakes with butterflies on top of them.

12 Good & Plenty candies or jelly beans
1/4 cup milk
1 tsp vanilla
2 large eggs
1 cup sugar
1 tsp baking powder
3 cups powdered sugar
White sanding sugar
2 tbs lemon juice
1 tbs lemon zest
1 1/4 cups unsalted butter
1/2 tsp salt
1 1/4 cups flour

Heat oven to 350°. Line a 12 cup muffin tin with paper liners. In a bowl, whisk together flour, baking powder and salt, set aside. Beat sugar and 1/2 cup butter in a bowl until light and fluffy. Beat in eggs. Mix in zest, vanilla and 1 tbs lemon juice. Alternately add flour mixture and milk, mixing until incorporated. Divide batter among muffin cups. Bake until done 20 min. Let cupcakes cool 5 min. in tin, then transfer to a wire rack to cool completely.
-Beat powdered sugar and remaining butter and lemon juice until light and fluffy. Frost cupcakes then dip in sanding sugar to coat completely. ARRANGE WINGS ON CUPCAKES---Insert pointy ends of a pair of bottom smaller wings into center of a cupcake. Repeat with two top larger wings. Dab a bit of frosting where the wings meet, place a piece of candy on top to form the butterfly's body, then serve...CANDY BUTTERFLY WINGS---3 cups total candy melts in assorted colors, pastry bags fitted with small writing tips, plastic teaspoons---Place 1/2 cup of each color candy melt in a separate bowl. Microwave first color on high until beginning to melt, 40 seconds. Stir until melted and smooth. Transfer to a pastry bag. Squeeze a small dot onto the center of the bowl of a spoon. Melt a second color candy, transfer to a bag and squeeze a larger dot of it onto the top of a spoon. Place the spoon on the baking sheet, let set. Melt a third color transfer to a bag and squeeze to cover the center dot and nearly all of the top dot, let set. Melt desired colors for wing base, transfer to a bag and squeeze on top of the designs, filling half the spoons, 3/4 full to make small bottom wings and the rest completely for the larger top wings. Tap spoon on counter to remove any air bubbles and create an even surface. Place on baking sheet, let set 15 min. When set, turn all the spoons over and with your thumb on the base, pop the wings out. The spoons can be reused to make additional wings. MAKES 12 SERVINGS.
