A delicious Irish Bread recipe with a touch of sweetness.
Partially made with whole wheat flour and raisins, this Irish Soda Bread is
so good right out of the oven but also makes a great snack once it's cooled.
 
Ingredients

2 cups all-purpose flour
1 cup whole-wheat flour
1/4 cup brown sugar, packed
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup raisins
2 cups buttermilk
4 tablespoons melted butter plus a little more for greasing the loaf pan
1 egg, lightly beaten
 
Instructions
1. Preheat the oven to 350 degrees F.
 
2. Sift the flours, brown sugar, baking powder,
baking and salt into a large mixing bowl.  Stir in the raisins.
 
3. In a small bowl, whisk the buttermilk, butter, and egg.
 
4. Pour the wet ingredients into the large bowl with the dry ingredients.
 
5. Stir everything with a spatula or wooden spoon until the dough
resembles a wet and sticky but evenly mixed dough.
 
6. Generously grease a 9x5 loaf pan with butter.
 
7. Scraping down the large bowl, transfer the dough into the loaf pan.
 
8. Bake the bread for 60 minutes until the bread is a nice and golden brown,
like honey.  The loaf should be firm to the touch.
 
9. Allow the bread to rest for 10 minutes before removing from its pan.
 
10. Allow the bread to cool down to room temperature or serve warm. 
*Note: Texture and taste will be slightly different once the bread has had time to completely cool.
