Veg Fried Rice

Here is a Quick and yummy Chinese Fried Rice recipe for a delicious lunch on weekends or for busy weekdays. Kids would love this and it always makes a great school lunch or after school dish for them.

You can reform your left over rice into this much loved fried rice and all it takes is just 10 mts to make when you have the veggies too ready. Definitely, an impeccable dish for a change in your routine, the days when you just want to use up all your leftovers, for a special lunch menu day with your favorite chinese sidedish, a good fit for a party and the list goes on…. :)

Ingredients:
Rice – 1 cup, 3/4th cooked and drained
Onion – 1, finely sliced
Carrot – 1, finely chopped
Capsicum – 1, finely chopped
Beans – 10 finely chopped
Cabbage – 1/4 cup, chopped
Ginger – 1 inch piece,finely chopped
Garlic – 6 cloves, peeled, finely chopped
Green Chillies – 4, slit
Soya Sauce – 1 tbsp
Vinegar – 1/2 tsp
Spring Onions – little, chopped
Salt as per taste
Oil as required

Method:
Heat oil in a pan.Saute the onions for a minute.Add all the vegetables, ginger, garlic and green chilli. Add lil sugar. Stir well and cook for two minutes. Add soya sauce, vinegar and salt.Stir well.When the vegetables are cooked and tender, add the rice.Mix well.Garnish with spring onions. Serve hot.
 
I ran out of spring onions while making this, so i haven't added here.
 
Note:
 
  • The rice should be separate and not mushy.Don't add too much of the vegetables as it will make the dish mushy.
  • You can add shredded cooked chicken or prawns or egg to make a non veg fried rice.
  • You can add white pepper powder to add little spice to the rice.
